The health benefits of olive oil are well known.  Olive oil is a monounsaturated fat and it a prime component of the healthful Mediterranean Diet.

Extra Virgin- the healthiest of all of the olive oils, this is from the first pressing of the fruit.  It is the least processed and therefore the most healthful.  It contains higher levels of antioxidants, particularly vitamin E and phenols.

Virgin- this is from the second pressing of the fruit.  It still retains its healthful benefits just not quite as much.

Pure – this one sounds good but the fact is that it has gone through some processing such as filtering and refining and thus it has lost much of it healthful benefits.

Extra light-  many people choose this one if they do not care for the olive taste.  Unfortunately this type of olive oil has gone through the most processing of all and it retains little if any of the original health benefits.
